Chef Ivan Pascual, 35 years old and from Almenar (a town in Lleida), owns Cal Gumer Dessert Workshop bakery and Cal Gumer Events event management company.
His esteem for pastry making is very vocational, at an early age, he tried to combine flavors and very primary textures and showed a surprising interest in the magic that is produced with the combination of different ingredients. Formed in the territory has made countless training courses in the best schools in the country that have led him where he is now, a stage of his professional life very creative and with great interest to face challenges that make him grow as a professional and as a person.
In 2005, Ivan started his first project, Cal Gumer Dessert Workshop, working as a backbone with the fruits of Terres de Ponent, a true jewel of this area and from which he has been able to apply interesting techniques. The business initially aimed at restoration expanded its scope in 2008 with the opening of a small store attached to the workshop so that the final consumer could enjoy their creations.
His concern for innovation and to bring the public into real gastronomic experiences gave birth to his latest project, Cal Gumer Events, a company of social and family events with the same philosophy of product cuisine, innovation and creativity.
All these years of daily effort, of study and analysis of techniques, of intense work with a great team of professionals, have led Ivan to be the winner of the Best Chocolater of Spain 2017-2018, which allows him to access the world championship that will be held in Paris in October 2018, a giant and very exciting challenge, an opportunity to participate in a global project, of a very high level, and which will surely allow him to grow and live a unique experience.
